Here's a recipe for Pad Thai, a delicious and popular Thai stir-fried noodle dish

Ingredients:
8 ounces (225g) rice noodles
2 tablespoons vegetable oil
2 cloves garlic, minced
1 shallot, thinly sliced
1/2 cup tofu, cubed
2 eggs, lightly beaten
1/2 cup shrimp, peeled and deveined (optional)
1 cup bean sprouts
2 green onions, sliced
2 tablespoons crushed peanuts
Lime wedges, for serving
For the sauce:
3 tablespoons tamarind paste
2 tablespoons fish sauce (or soy sauce for a vegetarian version)
2 tablespoons sugar
1 tablespoon rice vinegar
1/2 teaspoon chili flakes (adjust according to your spice preference)
Instructions:
Prepare the rice noodles according to the package instructions. Drain and set aside.
In a small bowl, whisk together the tamarind paste, fish sauce (or soy sauce), sugar, rice vinegar, and chili flakes to make the sauce. Set aside.
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat. Add the minced garlic and sliced shallot, and stir-fry for about 1 minute until fragrant.
Push the garlic and shallot to one side of the pan and add the cubed tofu to the other side. Cook for 2-3 minutes until the tofu starts to brown.
Push the tofu to one side and pour the beaten eggs into the other side of the pan. Let them cook for a few seconds until they start to set, then scramble them with a spatula and mix them with the tofu, garlic, and shallot.
If using shrimp, add them to the pan and stir-fry until they turn pink and are cooked through.
Add the cooked rice noodles to the pan and pour the sauce over the noodles. Use tongs or two spatulas to gently toss everything together, ensuring the noodles are evenly coated with the sauce.
Add the bean sprouts and half of the sliced green onions to the pan and continue tossing for another 1-2 minutes until the bean sprouts are slightly wilted.
Remove the pan from heat and garnish with the remaining sliced green onions and crushed peanuts.
Serve the Pad Thai hot with lime wedges on the side for squeezing over the noodles.
